- Preheat oven to 350°F (175°C)
- Spray 8-inch ramekin with non-stick spray
- Place ½ cup sugar in ramekin and caramelize in oven until golden (10-12 minutes)
- In mixing bowl, whisk remaining 1 cup sugar with heavy cream, milk, and vanilla
- Temper egg mixture into hot liquid, adding 1-2 tbsp at a time
- Pour custard mixture into caramelized ramekin
- Place in larger baking dish filled with hot water (water bath)
- Bake 35-45 minutes until slightly jiggly center
- Cool completely at room temperature before serving
