Ingredients
  

  • Granulated Sugar 1 ½ cups (can use coconut sugar)
  • Heavy Cream 2 cups (use full-fat milk if unavailable)
  • Milk 1 cup (non-dairy alternatives allowed)
  • Vanilla Extract 1 tsp (optional)
  • Large Eggs 8 (at room temperature)

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Spray 8-inch ramekin with non-stick spray
  3. Place ½ cup sugar in ramekin and caramelize in oven until golden (10-12 minutes)
  4. In mixing bowl, whisk remaining 1 cup sugar with heavy cream, milk, and vanilla
  5. Temper egg mixture into hot liquid, adding 1-2 tbsp at a time
  6. Pour custard mixture into caramelized ramekin
  7. Place in larger baking dish filled with hot water (water bath)
  8. Bake 35-45 minutes until slightly jiggly center
  9. Cool completely at room temperature before serving
