Method
 

  1. Separate egg yolks into a mixing bowl and discard whites
  2. Blend sugar into yolks until fully dissolved
  3. Sift cinnamon and citrus zest into yolk mixture
  4. Heat milk in saucepan until just steaming (do not boil)
  5. Drizzle hot milk into yolk mixture while stirring continuously to temper
  6. Return mixture to saucepan, whisk constantly over medium heat until thickened enough to coat spoon
  7. Strain into bowl, press plastic wrap directly on surface, and chill before serving
