Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup unsalted butter (cold)
  • 1 cup + 2 tbsp sugar
  • 4 large eggs (room temperature)
  • ½ cup fresh lemon juice
  • 1 tsp vanilla extract (optional)

Method
 

  1. Combine cold butter and flour until sandy.
  2. Mix in 1 tbsp sugar and a pinch of salt.
  3. Press dough into a 9x13" pan and refrigerate.
  4. Whisk eggs with sugar until fluffy.
  5. Add lemon juice, zest, and vanilla.
  6. Pour filling over chilled crust and bake at 325°F (160°C) for 20 minutes.
  7. Cool completely, then refrigerate for 3 hours.
  8. Sift powdered sugar for garnish.
