- Preheat oven to 350°F (175°C). Grease a 9-inch round cake tin with butter and line bottom with parchment paper.
- In a large bowl, whisk 2 cups flour, 1 ½ teaspoons baking powder, 1 tbsp cinnamon, and ½ tsp salt. In another bowl, whisk ¾ cup caster sugar, buttermilk, melted butter, egg, and vanilla until combined. Fold wet ingredients into dry just until no large lumps remain.
- For the streusel, mix 1/3 cup brown sugar, 1/4 cup flour, and melted butter (reserve 2-3 tbsp from the ½ cup total). Sprinkle evenly over the batter in the prepared tin.
- Bake for 35 minutes or until golden and toothpick comes out clean. Cool slightly before slicing into 12 portions.
