Ingredients
  

  • 3 packages (4 oz each) gelatin mix (3 different flavors recommended)
  • 16 oz Cool Whip (low-fat alternative available)
  • 3 cups fresh fruit (cherries, grapes, or pineapple)
  • 6 cups water (divided for gelatin activation)

Method
 

  1. Ripen watermelon in refrigerator for 30 minutes
  2. Blend half the fruit with 2 cups water until smooth
  3. Pour over gelatin base in 13x9-inch pan
  4. Chill first layer in refrigerator until firm (45 minutes)
  5. Whip gelatin packets in 2 cups boiling water each
  6. Pour each layer over cooled base in 30-minute intervals
  7. Crush remaining fruit and mix with cool whip
  8. Drape fruit-cool whip blend over set gelatin
  9. Refrigerate 3+ hours before slicing
