  • cup (88g) unsalted butter, melted
  • 1 can (14 oz/397g) sweetened condensed milk
  • 5 tablespoons (~200ml) key lime juice
  • 3 large organic egg yolks
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 325°F (165°C)
  2. Whisk graham cracker crumbs and melted butter until combined
  3. Press mixture into 9-inch tart pan with removable base including 0.5-inch rim
  4. Bake 5-7 minutes until lightly golden
  5. Let crust cool completely
  6. Whisk egg yolks in a medium bowl
  7. Add condensed milk and stir constantly to blend smoothly
  8. Gradually incorporate key lime juice until well combined
  9. Stir in vanilla extract and scrape bowl for uniform consistency
  10. Pour filling into cooled crust
  11. Smooth surface with offset spatula
  12. Chill 3 hours or until center resists with clean finger press
  13. Slice with chef’s knife and serve chilled
