Ingredients
  

  • 1 ¼ cups (150g) all-purpose flour
  • ½ cup (113g) unsalted butter, room-temperature
  • 2 cups (200g) granulated sugar (1/2 cup for crust, 1 1/2 cups for filling)
  • ¾ cup (170ml) fresh lemon juice
  • 2 tablespoons (10g) lemon zest
  • 3 large egg whites, room-temperature
  • ¼ teaspoon baking powder
  • Pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9-inch x 13-inch baking pan with parchment paper.
  2. In a bowl, combine 1 1/4 cups flour, 1/2 cup granulated sugar, and a pinch of salt. Cut in cold butter until crumbly. Press the crust into the pan and bake for 15 minutes.
  3. In a large bowl, beat 3 egg whites until slightly frothy. Add 1 1/2 cups sugar and 3/4 cup lemon juice, mixing until glossy. Stir in 2 tablespoons lemon zest, then pour over the cooled crust.
  4. Bake for 20–25 minutes until set but slightly shaken in the center. Cool completely, then refrigerate and cut into 16 bars.
