- Preheat oven to 350°F (175°C)
- In a large bowl, whisk flour, baking powder, granulated sugar, lemon zest, and salt
- Cut in softened butter or oil until mixture resembles coarse crumbs
- Add buttermilk and mix to form a smooth batter
- Stir in egg until fully incorporated
- In a separate bowl, peel, halve, and slice peaches into 1/4-inch rounds
- Toss half the peaches with 1 tbsp sugar to macerate
- Slice remaining peaches into larger chunks
- Grease a 9x5-inch loaf pan
- Spoon half the batter into pan, top with macerated peaches
- Mix 2 tbsp honey and 1 tsp cinnamon for the swirl
- Drizzle half the honey-cinnamon mixture over the first layer
- Add remaining batter, then scatter fresh peach chunks on top
- Drizzle with the rest of the honey-cinnamon swirl
- Bake at 350°F until golden and a toothpick comes out clean
