Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • ¼ teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon fresh lemon zest
  • ½ cup softened butter (1 stick) or oil
  • 1 large room-temperature egg
  • 1 cup buttermilk
  • 1 tablespoon sugar (for macerating)
  • 2 tablespoons honey (for swirl)
  • 1 teaspoon ground cinnamon (for swirl)

Method
 

  1. Preheat oven to 350°F (175°C)
  2. In a large bowl, whisk flour, baking powder, granulated sugar, lemon zest, and salt
  3. Cut in softened butter or oil until mixture resembles coarse crumbs
  4. Add buttermilk and mix to form a smooth batter
  5. Stir in egg until fully incorporated
  6. In a separate bowl, peel, halve, and slice peaches into 1/4-inch rounds
  7. Toss half the peaches with 1 tbsp sugar to macerate
  8. Slice remaining peaches into larger chunks
  9. Grease a 9x5-inch loaf pan
  10. Spoon half the batter into pan, top with macerated peaches
  11. Mix 2 tbsp honey and 1 tsp cinnamon for the swirl
  12. Drizzle half the honey-cinnamon mixture over the first layer
  13. Add remaining batter, then scatter fresh peach chunks on top
  14. Drizzle with the rest of the honey-cinnamon swirl
  15. Bake at 350°F until golden and a toothpick comes out clean
