Ingredients
  

  • 6–8 medium ripe peaches (or 2 cups canned)
  • ¾ cup granulated sugar
  • ¼ cup granulated sugar
  • ¼ cup all-purpose flour
  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter (cold, cubed)
  • 4 tsp cornstarch
  • 1 tsp salt
  • 1 ½ tsp baking powder

Method
 

  1. Slice peaches horizontally, remove pits
  2. Pack 5 tbsp water and 3/4 cup sugar into a bowl to create lavender-honey syrup
  3. Arrange peach halves cut-side down in syrup
  4. Sprinkle 1/4 cup sugar, 1/4 tsp salt, and 2 tsp cornstarch over peaches
  5. Stir gently until coated with glaze
  6. In a separate bowl, mix 1 1/2 cups flour, 2 tbsp sugar, 1 tsp salt, and baking powder
  7. Add cold cubed butter to the flour mixture until pea-sized crumbs form
  8. Press topping evenly over peach rounds
  9. Brush melted butter over the topping for golden crispiness (optional)
  10. Preheat oven to 400°F
  11. Transfer peaches and topping to a greased cast-iron skillet
  12. Bake for 45 minutes until golden and bubbly
