- Slice peaches horizontally, remove pits
- Pack 5 tbsp water and 3/4 cup sugar into a bowl to create lavender-honey syrup
- Arrange peach halves cut-side down in syrup
- Sprinkle 1/4 cup sugar, 1/4 tsp salt, and 2 tsp cornstarch over peaches
- Stir gently until coated with glaze
- In a separate bowl, mix 1 1/2 cups flour, 2 tbsp sugar, 1 tsp salt, and baking powder
- Add cold cubed butter to the flour mixture until pea-sized crumbs form
- Press topping evenly over peach rounds
- Brush melted butter over the topping for golden crispiness (optional)
- Preheat oven to 400°F
- Transfer peaches and topping to a greased cast-iron skillet
- Bake for 45 minutes until golden and bubbly
