Ingredients
  

  • 2 ¼ cups all-purpose flour
  • 1 cup (2 sticks) cold butter, cubed
  • cup granulated sugar
  • 3 cups sliced peaches
  • 6 tbsp granulated sugar
  • 1 tsp cinnamon
  • 2 tbsp cornstarch

Method
 

  1. Cut butter into flour mixture with a pastry blender
  2. Mix in 1/2 cup ice-cold water
  3. Knead dough 10 times
  4. Peel and slice peaches; add 6 tbsp sugar, 1 tsp cinnamon, and 2 tbsp cornstarch
  5. Roll dough on parchment paper; spread filling, leaving 2-inch borders
  6. Fold edges over filling
  7. Chill 30 minutes
  8. Bake at 375°F for 35 minutes
  9. Sprinkle 1 tbsp sugar during final 10 minutes
  10. Cool 30 minutes before serving
