Method
- Cut butter into flour mixture with a pastry blender
- Mix in 1/2 cup ice-cold water
- Knead dough 10 times
- Peel and slice peaches; add 6 tbsp sugar, 1 tsp cinnamon, and 2 tbsp cornstarch
- Roll dough on parchment paper; spread filling, leaving 2-inch borders
- Fold edges over filling
- Chill 30 minutes
- Bake at 375°F for 35 minutes
- Sprinkle 1 tbsp sugar during final 10 minutes
- Cool 30 minutes before serving
