Method
- Rinse rice under cold water until liquid runs clear
- Soak rice in 3 tbsp milk for 20 minutes
- In a pot, add soaked rice, remaining milk, sugar, cinnamon, and salt
- Bring to a boil over medium heat
- Reduce to low, cover, and simmer gently for 40–45 minutes
- Remove cinnamon stick
- Stir in mascarpone or coconut cream for creaminess
- Let rest 15 minutes before serving
