- In a mixing bowl, blend graham cracker crumbs, 1/4 cup sugar, and melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a 9-inch springform pan. Chill for 30 minutes.
- In a blender or food processor, combine softened cream cheese, 1 cup sugar, 3 eggs, and 1 tbsp vanilla extract. Blend until smooth and creamy.
- Pour the cheesecake mixture over the chilled crust and smooth the top with a spatula.
- Chill for 3 to 4 hours until firm.
- Toss sliced strawberries with a bit of sugar and lemon juice to make a sauce. Spread over the chilled cheesecake before serving.
